The only recipes I know of that bake at an extreme low temp (below 325) would be for cheesecakes, creme brulee, indian pudding - mostly egg and dairy based custards so the ingredients melt together over the course of a few hours.  Maida Heatter has a cheesecake recipe she adapted from a major newspaper (maybe the NY Times) that calls for 8 hours at 200.

But if you’re looking for a layer cake, a low temp won’t provide the structure needed.

How low were you looking for?  Is this for a specific project or just curiosity?

I don’t of any layer cakes baked at a low temperature but I do know that some fruit cakes (like the Christmas cakes made in England) are baked at a very low temp. for several hours.

I have two suggestions.  The dacquoise in TCB is baked for 1.5 to 2 hours in a 200F oven (pp302) but you may not think of that as a cake.  As Rozanne says we in the UK make our celebration cakes fairly rich and they take a long time to bake.  Oven temp is 275F or 140C and a 6-inch (15 cm) cake takes 3.5 hours, 9-inch (23cm) takes 4.75 hours and 11-inch (28cm) takes 5.5 hours.  Also,  I leave Pavlova (meringue) in the turned-off oven overnight.  Please supply more info on your special request for the cake!
